For the jellyfish: cured jellyfish (all aesthetic types work), white vinegar, sesame oil, sugar, salt
For the dressing: Mustard seeds, a little garlic, white vinegar, soy sauce, honey, salt
For the salad: Cucumber, pear, pine nuts
Preparation Jellyfish: Cut the jellyfish umbrellas into strips (5–10 mm thick). Rinse thoroughly in cold water to remove excess salt. Soak in cold water, then drain. Pour 80 °C hot water over them, stirring for 1 minute, then drain again and soak overnight in cold water. The next day, strain and gently squeeze out excess moisture. Mix in 2 teaspoons of sugar, ½ teaspoon of salt, and 1 tablespoon of vinegar.
Dressing: Stir 1 tablespoon of mustard seed powder into 1 tablespoon of warm water. Add crushed garlic, a dash of soy sauce, and about 3 tablespoons of white vinegar. Sweeten with 4 teaspoons of honey and a pinch of salt.
Salad: Peel and core the pear, slicing into thin strips, and soak in 500 ml of cold water with 1 teaspoon of sugar. Thinly slice half a cucumber and two to three carrots.
